Chef Jessie Ayala

At the heart of Chef Jessie Ayala’s cooking is a simple idea: great food starts with intention. Trained in classic French technique and influenced by the bold, vibrant flavors of Italian and Mediterranean cuisine, his approach is refined but approachable, focused on quality ingredients and thoughtful execution.

Jessie’s culinary path began in high school, when a home economics teacher recognized his natural ability and encouraged him to pursue cooking professionally. He went on to study at South Seattle Community College’s Culinary Arts program, building his foundation while working in some of Seattle’s most respected kitchens, including the Columbia Tower Club, Chandlers, and The Crab Pot.

After graduating, Jessie returned to the Yakima Valley and began shaping his own style at his aunt’s bed and breakfast in Prosser. At a time when the region’s wine industry was still emerging, he focused on French-inspired cuisine paired with local wines. His work earned him recognition as the Lower Valley’s Favorite Chef and established his reputation for quality and consistency.

In 2010, Jessie and his wife opened Tuscany Downtown in Prosser, a rustic bistro known for its wine pairings and welcoming atmosphere. Though the restaurant closed in 2013, it left a lasting impact on the community and laid the groundwork for future ventures.

That momentum led to the creation of Ciao Wagon, a mobile bistro and catering company, and eventually Ciao Trattoria in downtown Pasco. Originally designed as a fast-casual concept, Ciao evolved into a more refined dining experience in response to guest demand. Jessie continued to expand with Pasco Burger Company and Imbibe, each concept reflecting a different side of his approach to food and hospitality.

In 2020, a serious battle with COVID pneumonia forced Jessie to step away from the kitchen and reevaluate his path. That time of reflection brought a renewed sense of purpose and clarity, shaping the next phase of his career.

The Bradley by Chef Jessie represents that next chapter. Here, his cooking is grounded in French technique while remaining accessible and expressive. The focus is on balance, precision, and creating an experience that feels elevated without being intimidating.

For Jessie, the goal has always been the same: to bring people together through food that is honest, memorable, and made with care.
